A little hint or two on how to deal with those sloppy things. I personally use an ice cream scoop to scrape out the nasty stringy bits, and I open my pumpkin from the bottom.
For pies and other recipes, I'll use a tiny pie pumpkin. Those big honking pumpkins for sale as jack-o-lanterns make lousy food. They're grown for size, not taste. Get a pie pumpkin and be sure your recipes will be the very best.
